This New Yorker originally from New Dehli uses familiar ingredients like chicken, spinach and tomatoes to create traditional Indian dishes like sambhar and achari. Your mouth will water with spinach-soybean croquettes with tomato salsa, sambhar-marinated red snapper with crispy parantha and coconut chutney, stuffed achari chicken with tomato rice, kachumber salad and pappadam, and finally coconut firni with pineapple.
