Pickle My Liver: Best Pickle Cocktails
September 12, 2008
Newsflash, sourpuss—pickles aren’t just for dressing up burgers and feeding late night pregnancy cravings. All that vinegary brine can add just the right tang your favorite cocktail. And while you may cringe at the thought of drinking straight up pickle juice, remember your favorite "dirty martini" is made with olive brine. Just in time for NYC’s International Pickle Day, we bring you a list of cocktails that will make you glad to be in a pickle, for once.

“Japanese Pickletini” by Chef Anita Lo at
Bar Q

5 oz. Hendricks gin
1 oz. vermouth
3 slices Japanese cucumber pickle
1 tbsp. pickle juice
1 cube cucumber ice

Prepare the cucumber ice in advance by feeding a cucumber (with skin on) into a juicer. Strain, add a pinch of salt and freeze. Mix the gin, vermouth, and pickle juice in a shaker with regular ice and pour into a martini glass. Add a cucumber ice cube, pickle slices, and serve.

“Pickled Bloody Mary” at
SaraBeth’s

For Bloody Mary mix:
1 46-oz. can of tomato juice
1/4 cup grated horseradish
2 oz. Worcestershire sauce
1/2 tsp. celery seed

For pickling juice:
4 cups apple cider vinegar
4 cups water
1 cup sugar
1 tsp. salt
Jicama, carrots, red and green peppers

Bring pickling juice to boil, put in vegetables, bring back to boil, immediately remove from flame, and let cool and refrigerate. Mix ingredients of Bloody Mary mix and salt and pepper to taste. Garnish Bloody Mary with pickled vegetables.

“Pickle Back” at
Bushwick Country Club

1 shot of Old Crow Whiskey
1 shot of McClure’s Pickle Brine

Take the shot of Old Crow followed by the shot of McClure’s pickle brine. Trust us on this one!

“The Redhead Gibson” at
The Redhead

3 parts Plymouth Gin (or alternatively Absolut vodka)
¼ part dry vermouth

Stir in a mixing glass, and strain in a chilled martini glass. Garnish with three house-made Gibson onions, and 2 drops of pickling juice.

“Hot & Dirty Martini” at
Cabrito

2 oz. of vodka or gin
1/2 oz. of olive juice
1/2 oz. of pickled jalapeno liquid
Pickled jalapeno spear

Take all wet ingredients and place in a shaker over ice. Stir for 10-12 seconds. Strain into a chilled martini glass and garnish with pickled jalapeno spear.
