On a relatively un-colonized stretch of Atlantic Ave in Brooklyn Heights, restaurant Colonie shows us city folk how to do farm fresh without being, well, too farm fresh. Barnyard touches abound in this repurposed brownstone that manages to incorporate folksy pieces—like old church pews and rusty metal frames—into a decidedly upscale space. Colonie's three partners knew well enough to ride Brooklyn's wave of seasonal-ingredient obsession, and chef Alex Sorensen incorporates items like wild mushrooms and swiss chard into a rotating and well-edited list of dishes. Watch the creator at work in the spacious dining room, which features a formidable open kitchen, an adjustable communal table and a literal wall of foliage. The cocktails, not to be outdone, are created from scratch in front of you—watch a cucumber die a sacrificial death-by-juicer, transported straight into your glass with elderflower liqueur and mint syrup (Cool Hand Cuke, $12). Just don't get too attached—the menus are rotating based on what's in season. Who's pumped for next fall's sweet chard margarita?
