El Cobre:
The Ravi DeRossi collection of chichi cocktail lounges is set to rival Danny Meyer's stock in Shake Shacks. El Cobre (named for the patron saint of Cuba) joins Cienfuegos and Death & Co in the East Village where DeRossi seems to be building his own version of Little Havana. El Cobre’s "stadium seating" on marble steps won't give you a view of their own patron saint fountain, but you will get to watch your cocktail's creation by the ultra-knowledgeable bartenders. They’ll suggest you start off with something light like the Hemingway—a classic daiquiri (and Ernest’s favorite) made with grapefruit and maraschino—a drink that tastes nothing like your spring break in Panama City. You'll then work your way to a heavier, darker and "stinkier" rum with the Dutchie—Smith and Cross navy rum, Bols Genevier, yellow Chartreuse, lime, cane, soda, Peychauds bitters and mint—a drink that appears girlie, but tastes manly. Looks like DeRossi is one step closer to making us all yo ho ho for rum.
