Highlands: Good news: You don't have to leave your native "islay" for a night of superior single-malts. Just head to Highlands, the new West Village Scottish bar complete with Victorian wallpaper and a mantelpiece laden with all of Auntie Glyda's dusty tchotckas. In fact, just about the only thing that doesn't read "old-world Scotland" is the gorgeous crowd, a bunch that clearly prefers Barney's to bagpipes. But give 'em credit—they also know a good single-malt when they see one, which gets us to the real point of visiting a place like this. Sure, you can nibble on fusion-y fare like haggis ravioli or vegan "birdies," but in the end, what's the point if the scotch isn't top notch? Thankfully, Highlands already has a list worthy of its homeland, including Glenrothes 91, three selections from Compass Box and the entire Laphroig collection. For those with more delicate of constitutions, cocktails cover the Scottish avant-garde with the likes of the Apricot Ginger, Blood and Sand (no, not the actual ingredients), and a Gin & Tonic infused with a chunk of cucumber the size of a curling stone. Bottom line? Buckle your kilts, kids.
