In this digital age, it’s hard to wait four seconds for a good thing—which is why we so appreciate the folks at Pizza Roma for waiting four days for their dough to rise. They believe those lazy 96 hours make the pizza lighter, healthier and more digestible. While it’s probably better to get your gastrointestinal advice from a doctor, it can’t be denied that Pizza Roma’s Roman pizzas go down quickly and easily. While that’s easy on the taste buds, it’s substantially less satisfying for the wallet, particularly when you find that half a $28 margherita special will barely sate the appetite. There’s an open-air backyard to relax away your economic worries, though your imbibing options are limited to a single beer (Moretti, of course, $6) and small wine list ($5 for low-end Merlot, $11 for better glasses). But in a neighborhood that’s become renowned as pizza central, Pizza Roma’s slices certainly stack up—luckily you don’t have to be the one standing around for 96 hours waiting for them to be ready.
