Plunge Bar + Lounge @ Gansevoort Park Avenue:
You can take the Gansevoort out of the Meatpacking District, but you can’t take the high-heeled scenesters and deep-pocketed suits out of the Gansevoort. Mingle with the pretty people on one of several intimate terraces at Plunge Bar + Lounge at the Gansevoort Park Ave—not your everyday hotel pool bar to say the least. Speaking of "plunge," even the bathrooms are magnificent, with state-of-the-art hand dryers by Dyson—that's right, by the people who brought you that $700 vacuum. Make sure you dress to impress, but don't fret over designer swimwear, the glass-enclosed pool is for guests only. Like most rooftop bars, this one muddles specialty cocktails for around $15 (you’ve got to subsidize the cost of the hand dryers!), but at least you get an exquisite view out of the deal. Dance to the thumping bass while munching on Kobe Pigs in a Blanket and knock out that sweet tooth with a Peanut Butter and Jelly Ice Cream Sandwich ($12-$20). Cost aside, you'll be glad you took the plunge.
