Whether you're in NYC on holiday or a native just wanting to pretend that you are, the Carlton Hotel’s Salon Millesime aims to offer up cocktail hour—and all the hazy hours that follow—the glamorous way this city used to do it. Your notions of "hotel bar" will be reinvented by this multi-level, multi-roomed restaurant and lounge spotlighted by a center platform, where on any given night you might find a jazz singer or a pianist plucking the standards. Fitting, considering “Millesime” is French for vintage—there’s a touch of old-fashioned formality to the space, right down to the gin martinis and re-imagined Manhattans. With the Ace Hotel down the block and the Gansevoort opening across the street catering to a younger set, Millesime appeals to a slightly more mature crowd, evidenced by touches like the animal-print chairs (cougar!) and $15 cognac cocktails. While a full restaurant is to come, for now you must resign to snacking on shared plates ($4-16) of flaky croquet monsieurs, lamb brochette and crispy bacon, already reputed to have ruined a vegetarian or two.
