The Trilby: For those who don’t speak British, a trilby is a hat, and hats off to the Trilby, a lounge and restaurant in the Cooper Square Hotel, for creating a swank cocktail haven smack dab in the middle of NYU. The bar area is equipped with banquettes under a slanted ceiling of dark subway tiles, while the lounge hosts a mixed-age crowd on leather couches, velvet sofas, and a myriad of ottomans around tree stump tables. Large potted plants and candles in hurricane vases dot the dining area, which is also home to high ceilings and a sinister painting of a faceless man wearing a bowler hat (a.k.a., not a trilby). You will find the namesake all over the menu though, which makes for a fantastic three-course meal—sip The Trilby (Dewar’s White Label, vermouth, Parfait Amour, orange bitters and absinthe, $12) while eating The Trilby Burger (topped with Vermont cheddar and “special sauce,” $15), and finish with The Trilby Ice Cream Float ($10). When the weather warms and everyone can literally take their hats off, look out for a sprawling garden area to finish the space.
