The Wayland:
Your new favorite bar just opened in Alphabet City. Then again, if you don’t like finely crafted cocktails and tasty bites in an inviting, casual atmosphere, your absence from The Wayland will only mean more room for the rest of us. The skilled crew behind the concrete bar whips up tipples like the San Fran Spout (Fernet-Branca and homemade cola, $7) and—partly as a nod to the spot’s former life as Banjo Jim’s—The Old Backwoods (I Hear Banjo’s) (Apple Pie Moonshine, homemade spiced apple bitters and applewood smoke—yep, smoke—$11), though beer ($4-$7 regularly, $3 drafts Monday-Friday 5-7pm) is available as well. They’re also preparing dishes ($3-$15) like roasted bone marrow and “braised beast” with merely an induction cooktop and a can-do attitude. In a room decorated with salvaged wood from a nearby school (it seems more like a bar in a small mountain town than Manhattan), local musicians play bluegrass, indie rock and American roots. Appropriate, considering your new favorite bar was named after Waylon Jennings.
