The green fairy lands in Gramercy with Vintage Irving. Next to Sidebar, its new sister sports bar, this rustic-meets-contemporary European restaurant and wine bar is complete with the season's biggest trend—an absinthe bar. Busy owner Michael Sinensky (Proof Bar & Lounge, Hudson Terrace, Sidebar, Village Pourhouse) offers a small-plates focus here, served at communal tables. Look for cured meats and imported cheese, and plates such as boquerones (cured anchovies), lobster bisque, chicken meatballs, and fig tempura with vanilla ice cream. A private tasting room seating eight to 12 guests will host for celebrity chefs, sommeliers, and mixologists.
