Initial signs indicate that this new whiskey joint (from the guys behind the mouth-watering burger at Royale) is just more of the same tired trend saturating North Brooklyn nightlife. Faux-tin ceiling, quirky Victorian-fire-hydrant wallpaper, and what's that? Did you just say speakeasy…again? So how can you keep a trendy bar from becoming just another cooler-than-thou scene? The Williams & Bailey plan to Be Nice and Not Suck: install a couple of blonde-haired, sweet-as-pie Midwestern girls behind the bar to charm the crowd. And remember we're in Brooklyn, now—so happy hours go ‘til eight and charging double minimum wage for a cocktail is simply out of the question. While the food is still a bit hit or miss (a sure hit: the wings, with just enough sweetness to make their lack of dressing irrelevant), the cocktails knock it—or at least you—right out of East River park. Try the Sazarac ($9)—that’s Sazarac Rye cut with Absinthe, folks. Because in Williamsburg, apparently only cool kids need mixers.
